Oléique, AcideL'acide oléique vient du latin oleum et veut dire huile. C'est le plus abondant des acides gras monoinsaturés à chaîne longue dans notre organisme. Sa formule chimique brute est C18H34O2 (ou CH3(CH2)7CH=CH(CH2)7COOH). Son nom IUPAC est acide cis-9-octadécénoïque, et son nom court de lipide est 18:1 cis-9. La forme saturée de cet acide est l'acide stéarique.
On le symbolise par les nombres 18:1 pour indiquer qu'il possède 18 atomes de carbone et une liaison éthylénique. Pour indiquer la position de la double liaison, on préfère indiquer le nombre de carbones entre le dernier carbone (n° 18) et le carbone où commence la double liaison (n° 9), d'où 18 - 9, qu'on écrit n - 9, en désignant par n le nombre de carbones de la chaîne. L'acide oléique est donc un acide gras insaturé, plus précisément monoinsaturé.
La double liaison agit sur la forme de la molécule et des triglycérides qu’elle forme avec le glycérol. Comme la molécule ne peut pas pivoter autour de C = C, la chaîne est beaucoup moins flexible que l’acide stéarique et ne peut pas former de boule. Les molécules des esters de cet acide sont beaucoup moins compactes que la tristéarine: ces sont des huiles.
À la température de notre corps c'est un liquide (huile), qui ne se solidifie qu'à 13,4 °C.

Sensibilité cutanéeIndex. décimale : 668.5 Parfums et cosmétiques Résumé : - OBJECTIF : Le blocage du récepteur TRPV1 est une approche intéressante pour le traitement des peaux sensibles. Ici, nous avons étudié le potentiel des dérivés de grifolin d'Albatrellus ovinus pour agir comme bloqueurs des récepteurs TRPV1 et leur potentiel pour servir d'ingrédients actifs cosmétiques.
- METHODES : Les caractéristiques de liaison de dérivés de grifoline d’Albatrellus ovinus ont été déterminées dans des essais in vitro compétitifs et fonctionnels pour obtenir les valeurs de CI50. Le récepteur TRPV1 a été activé in vivo avec de la capsaïcine et de la chaleur nocive pour étudier la rougeur de la peau, la microcirculation, les sensations cutanées et les seuils de douleur thermique.
- RESULTATS : Les dérivés de grifoline extraits d'Albatrellus ovinus ont montré une inhibition in vitro et in vivo du récepteur TRPV1. Outre la suppression de l'activité du récepteur TRPV1 par stimulation chimique avec la capsaïcine, on a montré que l'activation thermique était également inhibée par l'application de formulations cosmétiques contenant 3% d'extrait d'Albatrellus ovinus. La réduction des sensations de picotemente et de brûlure, ainsi que la réduction des rougeurs et de la microcirculation lors de l'irritation par la capsaïcine ou le stress thermique, ont prouvé leur efficacité in vivo.

kératineLa kératine est une protéine, synthétisée et utilisée par de nombreux êtres vivants comme élément de structure, et également l'exemple-type de protéine fibreuse.
La kératine est insoluble, et peut être retrouvée sur l'épiderme de certains animaux, notamment les mammifères, ce qui leur garantit une peau imperméable. Parfois, lors d'une friction trop importante, la kératine se développe à la surface de la peau formant une callosité. Les cellules qui produisent la kératine meurent et sont remplacées continuellement. Les morceaux de kératine qui restent emprisonnés dans les cheveux sont couramment appelés des pellicules.
La molécule de kératine est hélicoïdale et fibreuse, elle s'enroule autour d'autres molécules de kératine pour former des filaments intermédiaires. Ces protéines contiennent un haut taux d'acides aminés à base de soufre, principalement la cystéine, qui forment un pont disulfure entre les molécules, conférant sa rigidité à l'ensemble. La chevelure humaine est constituée à 14 % de cystéine.
Il y a deux principales formes de kératines : l'alpha-kératine, ou α-keratin, présente chez les mammifères notamment, dont l'humain, et la bêta-kératine, ou β-keratin, que l'on retrouve chez les reptiles et les oiseaux. Ces deux types de kératines ne présentent clairement pas d'homologie de séquence.
Chez l'être humain, la kératine est fabriquée par les kératinocytes, cellules se trouvant dans la couche profonde de l'épiderme. Les kératinocytes absorbent la mélanine (pigment fabriqué par les mélanocytes), se colorent et ainsi cette pigmentation de l'épiderme permet de protéger les kératinocytes des rayons ultraviolets du Soleil.
