KombuchaLe kombucha est une boisson fermentée légèrement acide. Elle est préparée grâce à une culture symbiotique de bactéries et de levures que l'on plonge dans une solution sucrée à base de thé (traditionnellement du thé noir). À ce jour, les origines du kombucha restent inconnues. La boisson pourrait être millénaire, mais les premiers écrits la concernant ne remontent qu'à la fin du XIXe siècle.
Le symbiote est couramment appelé « mère de kombucha » (vulgairement "champignon"), membrane visqueuse de quelques centimètres d'épaisseur qui ressemble à une "mère de vinaigre" et qui donne au toucher la même sensation que le kombu, l'algue laminaire. Mise en culture dans un récipient contenant la solution sucrée et recouvert d'un linge pour éviter les poussières mais laissant passer l'air, la mère se développe avec une couche jeune (couleur blanche) du côté exposé à l'air, et une couche ancienne (plus colorée) contenant des levures mortes formant un dépôt dans le fond du récipient. Cette levure permettra la fermentation lors de la mise en bouteille. Cette fermentation donnera une boisson gazeuse.
Cette boisson est traditionnellement consommée dans plusieurs pays, réputée bénéfique pour les problèmes de digestion et utilisée comme remède populaire en automédication pour de nombreuses affections. Certains produits commerciaux contiennent des conservateurs ou sont pasteurisés et les bactéries potentiellement bénéfiques à l'organisme sont détruites : la boisson en perdrait son éventuelle efficacité thérapeutique.
L'efficacité du kombucha sur l'être humain n'a pas été prouvée scientifiquement. Quelques cas de toxicité grave suspectés d'être liés à une consommation de kombucha ont par ailleurs été rapportés dans la littérature médicale. (Wikipedia)

Rafle de raisinLa rafle, ou la râpe, est la charpente d'une grappe de raisin. Elle est faite de fibres, de tanins et de matières minérales. Elle est constituée d'une ramification principale, portant, selon les variétés de vigne, une aile, ramification secondaire. Le pédoncule relie la grappe au sarment au niveau du nœud. Des ramifications appelées pédicelles portent les grains de raisin, les baies.
La rafle, par laquelle circule la sève, débouche dans la pulpe des baies par les faisceaux libéro-ligneux qui alimentent les raisins.

The process that can significantly increase the content of bioactive compounds is fermentation by yeast and other microorganisms. The current study presents, for the first time, an evaluation of the potential of grape stems extract and its ferments using the Scoby consortium, as a cosmetic raw material for improving the skin care properties of facial cosmetics.
- Methods : Fermentation of grape stems using Scoby consortium was carried out for 10 and 20 days. Unfermented and fermented extracts were analysed for their antioxidant activity and chemical composition, with a particular emphasis on biologically active substances. Additionally, the influence of the addition of the obtained ferments to the model cosmetic creams on hydration, transepidermal water loss and skin pH were assessed.
- Results : The obtained results revealed that grape stems extract and its ferments are a rich source of phenolic compounds and show antioxidant activity, with the highest values observed for extracts on the 20th day of fermentation. Furthermore, the addition of the extract, as well as ferment, to the cream has a positive effect on skin hydration and reduces transepidermal water loss.
- Conclusion : These results suggest that grape stem extracts are a prospective source of active compounds that may be valuable ingredients for the cosmetic industry. TyrosinaseIndex. décimale : 668.5 Parfums et cosmétiques Résumé : - Objective : Melanin gives some natural protection against the harmful effects of ultraviolet radiation; however, excessive production of melanin causes skin hyperpigmentation. Depigmenting cosmetics can be used to control this process; however, depigmenting agents commonly used have some disadvantages, such as low bioavailability, photosensitization, cellular toxicity, and insolubility. Natural sources of melanogenic inhibitors have become important alternatives to synthetic ones. The objective of this review was to summarize the results of studies on natural extracts that have been reported in the literature to inhibit the process of melanogenesis, giving a view on their suitability for potential use in new cosmetic formulations for skin-lightening.
- Data sources : A systematic literature search was carried out using the descriptors: “melanogenesis”, “tyrosinase”, “tyrosinase inhibition”, and “natural agents”.
- Study selection : Publications were selected based on our designated inclusion and exclusion criteria, and a total of 15 studies met these criteria.
- Data extraction : The following were used in the review of each paper which met the criteria: the name of the plant (all of the natural extracts turned out to be from plants), the method used to obtain the plant extract, the method for evaluating anti-tyrosinase activity, the main results, and the conclusions.
- Data synthesis : All evaluated natural agents demonstrated anti-tyrosinase effect. The species Leathesia difformis, Morus alba, Orostachys japonicus, Heracleum moellendorffii, Coix lacryma-jobi (adlay), Inula brittanica, and Gailardia aristata stood out from the others due to their application as potential inhibitors of more than three proteins related to melanogenesis, including the cyclic adenosine monophosphate response element-binding protein, microphthalmia-associated transcription factor, tyrosinase, tyrosinase-related protein-1, tyrosinase-related protein-2, and dopachrome tautomerase.
- Conclusion : The plants present an anti-tyrosinase effect that must be better explored in the new cosmetic formulations. CatéchineLa catéchine est une molécule de la famille des flavonoïdes de la sous-classe des flavanols. Elle est aussi connue sous le nom de catéchol, avec le risque de confusion avec le pyrocatéchol parfois dénommé lui aussi catéchol. L’usage dans la communauté scientifique a fini par imposer le terme de catéchine, dérivé du terme anglais catechin.
Initialement découverte dans les fruits de l'acacia à cachou (Acacia catechu) duquel elle dérive son nom, la catéchine et ses nombreux isomères sont de puissants antioxydants qui aident à prévenir les maladies inflammatoires et coronariennes.
Le terme de catéchine est aussi parfois utilisé pour désigner la classe des flavanols (flavan-3-ols, flavan-3,4-ols et leurs esters galliques). Pour éviter la confusion entre la classe et le composé, ce dernier est désigné dans ce contexte par (+/-)-catéchine.

LaccasesLes laccases (EC 1.10.3.2) appartiennent à une famille d'enzymes ayant pour cofacteur du cuivre. C'est une oxydase (oxydoréductase, EC 1) que l'on retrouve dans de nombreuses plantes, champignons et micro-organismes.
Le cuivre est lié sur plusieurs sites de la protéine. On distingue trois types. Les types 2 et 3 sont appelés grappe tri-nucléaire. Le cuivre du type 1 est soluble dans l'eau. Le mercure déplace le cobalt complexé dans les laccases. Les complexants du cuivre peuvent le déplacer et le remplacer par du cobalt. Les cyanures complexent également le cuivre, mais dans ce cas il n'est pas possible de réinsérer du cobalt.
Les laccases oxydent les dérivés phénoliques mais d'une façon ménagée qui transforme la lignine en monolignol.

Tannage Résumé : Vegetable tannins used in tanning of hides and skins are limited by surface reactions as well as large molecular weights, reducing penetration into the skin and lowering the thermal stability or tanning effect. Investigation into the utilization of small phenolic compounds such as catechin to improve penetration with subsequent in situ enzymecatalysed polymerization may provide a novel and alternative tanning agent. In this study, catechin was oxidized by enzymatic catalysis using laccase, with the polymerization confirmed by FT-IR and UHPLC. Tanning experiments were undertaken to measure the effect of laccase-catalysed polymerization of catechin in the thermal stabilization of collagen, i.e., the change in shrinkage temperature between the treated and untreated sample of hide powder (ÄTs). A factorial design was subsequently used to study process parameters that may affect enzymatic reactions: temperature, substrate concentration, enzyme concentration and incubation period. The statistically significant variables were found to be temperature and incubation period, and were thus chosen to be studied further for process optimization using response surface methodology. Maximum ÄTs can be obtained for a temperature of 34.6°C and incubation period of 25 hours. This study demonstrates that the stabilization of collagen (ÄTs) is increased with the use of enzyme-assisted polymerization. Tannage Résumé : Mechanisms of tanning are the fundamental base for predicting and developing new tanning agents and technologies. However, many mechanistic questions remain for us, such as: How does the penetration happen? How do the phenolic compounds work individually? In this study, penetration processes of the tannin extracts were investigated with the Bayberry extract (prodelphenidins), the Larch extract (procyanidins) and the Acacia Mangium extract (prodelphenidin-procyanidin complexes) used as tanning agents. During the process, the tanning liquids were regularly sampled and the simple phenolics and polyflavonoids were quantified respectively with a Prussian blue assay, a conductivity analysis, an acid-butanol assay as well as a HPLC analysis. The results showed that, during tannin, the concentration of polyflavonoids in the tanning liquid decreased continuously. In contrast, for the simple phenolics, the concentration decreased at first and later increased. Therefore, penetration processes of the tannin extracts can be described as: in the beginning, both simple phenolics and polyflavonoids started to penetrate; then the simple phenolics completed their penetration first and reversibly bound with collagens; in the meantime, the polyflavonoids were still penetrating and gradually replacing those simple ones from collagen matrix; at the end of the tanning processes, most of the simple phenolics were replaced by the polyflavonoids, meanwhile they were migrated back into the tanning liquids. The results will provide valuable information to help understanding the mechanism of vegetable tanning.
