Tannage Résumé : Recent fundamental studies in these laboratories have been concerned with the range of relatively weak, reversible interactions, generally termed "polar" interactions, which occur between hide collagen and its aqueous environment. These studies have provided further insight into the factors governing this reactivity. The interaction has wide significance in determining solubilities and properties of solutions, the solution structure of proteins as well as the interaction of hide collagen with technological materials such as vegetable tannins, dyestuffs and water-proofing agents. Hence, greater understanding of the basic processes involved is a prerequisite for rationali-sation and improvement in the technological operations of curing and tanning. In this review, the mechanism of polar interaction indicated in fundamental studies is outlined and some areas of practical application discussed, including the use of polar additives as penetration assistants in vegetable tannage and the application of polar molecules carrying long-chain hydrocarbon structures in waterproofing treatments for leather. Tannage Résumé : The effects of in-situ precipitated calcium carbonate (CaCO3) on the thermal stability and decomposition kinetics of vegetable-tanned collagen fiber (VCF) are evaluated by thermogravimetry. The kinetic and mechanism analysis of the decomposition stage use an integrated procedure involving model-free methods and master-plots method. Various methods are employed to calculate the activation energy of the fibers. It is shown that VCF/CaCO3 exhibits better thermal stability than VCF in the range 22-350°C. However, thermogravimetric results also show that the presence of CaCO3 accelerates the decomposition process at higher temperatures. When the conversion values are below 0.4, the most probable decomposition mechanism for VCF and VCF/CaCO3 is random nucleation and nuclei growth (Avrami, equation A2). Above 0.4, the decomposition mechanisms of VCF and VCF/CaCO3 are most probably described by third (F3) and second (F2) order models, respectively. Tannage Résumé : The process of stabilizing the skin collagen against denaturation under heat, enzymes, stress etc. — popularly described as tanning is carried out either using metal ions (predominantly Cr(III)) or vegetable tannins derived from plant sources rich in polyphenols. Conventional leather processing is carried out in aqueous medium and hence the tannins have been extracted into water, sulfited to increase water solubility and then sold as spray dried extracts. Classical drawbacks include the low resistance of the extracts to bacteria and fungi, copious quantities of water required for extraction and tanning etc. In an attempt to make the leather processing sustainable, taking cue from other economically viable methods for tannin extraction, this paper looks at paradigm shift from water extraction of tannins to solvent based extraction, followed by leather processing in solvent. The results presented with ethanol as the green solvent highlights the significance of the developed method, in not only enhancing tannin to non-tannin ratio (T/NT), but also improving thermal stability of the tanned collagen at microscopic rat tail tendon (RTT) and macroscopic leather level. GélatineLa gélatine est une substance solide translucide, transparente ou légèrement jaune, presque sans goût et sans odeur, obtenue par l'ébullition prolongée de tissus conjonctifs (peaux) ou d'os d'animaux (principalement porc, bœuf, poisson). Elle possède de nombreuses applications dans le domaine culinaire, la médecine, les industries agroalimentaire et pharmaceutique.
En matière d’étiquetage, la gélatine est considérée par la norme européenne3 comme un ingrédient et non pas comme un additif, c'est pourquoi elle n'a pas de numéro E. Hors Union européenne, elle est considérée par certains pays comme un additif gélifiant et on peut la trouver avec la dénomination E441.
La gélatine est un mélange de protéines obtenu par hydrolyse partielle du collagène extrait de la peau comme la peau de porc (cochon), des os, des cartilages, etc. Les liaisons moléculaires entre les fibres de collagène sont alors brisées. Mélangée à de l'eau, la gélatine forme un gel colloïdal semi-solide thermo-réversible (il fond lorsqu'il est chauffé et recouvre son aspect gélatineux lorsqu'il est refroidi). Sous forme déshydratée, par contre, la gélatine n'a pas de point de fusion et devient friable ou brûle quand elle est chauffée à trop haute températureLa rhéologie de la gélatine se caractérise par un comportement viscoélastique, et des contraintes trop élevées ou appliquées trop rapidement peuvent entraîner une rupture fragile (fracturation) ou ductile6. Le caractère plutôt élastique/fragile ou plutôt visqueux/ductile dépend de la concentration en gélatine de la solution aqueuse et de la température, ainsi que de la durée de la mise sous contrainteLes acides aminés constituant la gélatine sont : la glycine (21 %), la proline (12 %), l'hydroxyproline (12 %), l'acide glutamique (10 %), l'alanine (9 %), l'arginine (8 %), l'acide aspartique (6 %), la lysine (4 %), la sérine (4 %), la leucine (3 %), la valine, la phénylalanine et la thréonine (2 %), l'isoleucine et l'hydroxylysine (1 %), la méthionine et l'histidine (< 1 %) et la tyrosine (< 0,5 %). Ces valeurs sont variables (surtout pour les constituants minoritaires) et dépendent de la source de matériaux bruts et de la technique de préparation. La gélatine est constituée à environ 98-99 % (en poids sec) de protéines et contient 18 acides aminés dont huit des neuf acides aminés essentiels à l'Homme. Elle n'a qu'une relative valeur nutritionnelle du fait de l'absence de tryptophane et de son déficit en isoleucine, thréonine et méthionine; elle possède également un taux inhabituellement élevé d'acides aminés non essentiels, la glycine et la proline (qui sont produits par le corps humain). QuebrachoLe quebracho est un arbre à écorce ligneuse, mesurant 30 mètres de haut, à feuilles tannées et à fleurs tubulées blanches.
Quebracho est l'un des noms communs, en espagnol, d'au moins trois espèces similaires d'arbres originaires du Gran Chaco, en Amérique latine : Schinopsis lorentzii (quebracho colorado santiagueño), de la famille des Anacardiaceae ; Schinopsis balansae (quebracho colorado chaqueño), de la même famille ;
Aspidosperma quebracho-blanco (quebracho blanc), de la famille des Apocynaceae.
Ces trois espèces sont riches en tanin et fournissent un bois très dur, particulièrement résistant. Leur nom provient de l'espagnol quiebrahacha, qui signifie brise-hache.

The uptake of quebracho/gelatin product by the wet blue was on the average about 55% of the 10% gelatin/quebracho product offered ; the reaction appeared to be complete after about 4 h. The uptake of quebracho alone by the wet blue was run as a control ; after 2 h almost 100% of the quebracho was taken up by the hide. As a second control, the effect of eliminating vegetable tannins (quebracho and mimosa) from the retan, color, and fatliquor (RCF), on properties of the crust was tested. Epi-fluorescent imaging and scanning electron microscopy (SEM) results indicated distinctive differences between the two control samples and the gelatin/quebracho treated hide. The gelatin/quebracho treated samples had superior subjective properties when compared to untreated controls ; differences in mechanical properties were dependent on whether vegetable tannin was present or absent in RCF. Thus a filler produced from a common vegetable tannin (quebracho) and a waste product from the leather industry (gelatin) can add economic value to leather by improving its quality.
