Langues : Anglais (eng) Catégories : Gélatine La gélatine est une substance solide translucide, transparente ou légèrement jaune, presque sans goût et sans odeur, obtenue par l'ébullition prolongée de tissus conjonctifs (peaux) ou d'os d'animaux (principalement porc, bœuf, poisson). Elle possède de nombreuses applications dans le domaine culinaire, la médecine, les industries agroalimentaire et pharmaceutique.
En matière d’étiquetage, la gélatine est considérée par la norme européenne3 comme un ingrédient et non pas comme un additif, c'est pourquoi elle n'a pas de numéro E. Hors Union européenne, elle est considérée par certains pays comme un additif gélifiant et on peut la trouver avec la dénomination E441.
La gélatine est un mélange de protéines obtenu par hydrolyse partielle du collagène extrait de la peau comme la peau de porc (cochon), des os, des cartilages, etc. Les liaisons moléculaires entre les fibres de collagène sont alors brisées. Mélangée à de l'eau, la gélatine forme un gel colloïdal semi-solide thermo-réversible (il fond lorsqu'il est chauffé et recouvre son aspect gélatineux lorsqu'il est refroidi). Sous forme déshydratée, par contre, la gélatine n'a pas de point de fusion et devient friable ou brûle quand elle est chauffée à trop haute températureLa rhéologie de la gélatine se caractérise par un comportement viscoélastique, et des contraintes trop élevées ou appliquées trop rapidement peuvent entraîner une rupture fragile (fracturation) ou ductile6. Le caractère plutôt élastique/fragile ou plutôt visqueux/ductile dépend de la concentration en gélatine de la solution aqueuse et de la température, ainsi que de la durée de la mise sous contrainteLes acides aminés constituant la gélatine sont : la glycine (21 %), la proline (12 %), l'hydroxyproline (12 %), l'acide glutamique (10 %), l'alanine (9 %), l'arginine (8 %), l'acide aspartique (6 %), la lysine (4 %), la sérine (4 %), la leucine (3 %), la valine, la phénylalanine et la thréonine (2 %), l'isoleucine et l'hydroxylysine (1 %), la méthionine et l'histidine (< 1 %) et la tyrosine (< 0,5 %). Ces valeurs sont variables (surtout pour les constituants minoritaires) et dépendent de la source de matériaux bruts et de la technique de préparation. La gélatine est constituée à environ 98-99 % (en poids sec) de protéines et contient 18 acides aminés dont huit des neuf acides aminés essentiels à l'Homme. Elle n'a qu'une relative valeur nutritionnelle du fait de l'absence de tryptophane et de son déficit en isoleucine, thréonine et méthionine; elle possède également un taux inhabituellement élevé d'acides aminés non essentiels, la glycine et la proline (qui sont produits par le corps humain). Tannage Résumé : The fluorescence quenching of gelatin with tannic acid was studied, and the reaction mechanism was analyzed by the Stern-Volmer equation. The number of binding sites, the binding constant, the thermodynamic functions of the reaction between gelatin and tannic acid at different temperatures were calculated. The results show that the fluorescence quenching of the gelatin with tannic acid is static quenching and that the reaction occurs when both the gelatin and the tannic acid are at ground state. The non-fluorescing complex compound is formed by hydrophobic interactions. The standard molar enthalpy (ΔHmθ) in the reaction is 58.7 KJ•mol-1 and considered as a constant for small temperature changes. The standard molar entropy values (ΔSmθ) are 277.4 J•mol-1•K-1, 277.4 J•mol-1•K-1 and 276.5 J•mol-1•K-1 at 29°C, 34°C and 38°C respectively. The thermodynamic functions in the reaction (ΔHmθand ΔSmθ ) indicate that the reaction between the gelatin and tannic acid is endothermal and that entropy increases in the process. The study should help to understand the tanning mechanism. TaninsIndex. décimale : 667.9 Revêtements et enduits Résumé : The annual cost of corrosion globally exceeds 1.8 trillion US dollars, which translates into 3-4 % of the GDP of industrialised nations worldwide. Over the past decade there has been significant progress in the development of smart coatings. Smart coatings require triggers to respond to the environment. Such triggers can be moisture, pH, chloride ions concentration, mechanical damage, and temperature and redox activity. In the current work we report synthesis of silica encapsulated tannic acid based smart coatings and its rust preventive performance derived out of the same. Epoxy primer grey paint and epoxy novolac based tank liner paints prepared using silica encapsulated tannic acid (MNSTA) were applied over manually cleaned surface. Its triggering mechanism was analysed by exposing them to different acidic pH and subsequently exposed to salt spray testing. The same has been compared with normal salt spray behaviour. Pull off adhesion, cathodic disbondment were performed in addition to understand its overall anti-corrosive behaviour. TaninsIndex. décimale : 675 Technologie du cuir et de la fourrure Résumé : More and more bio-based materials are used in waterborne polyurethanes (WPUs) due to their non-toxic and pollution-free advantages. In this paper, waterborne polyurethanes (WPU) were synthesised from 2, 4-Toluene diisocyanate (TDI-80) and polypropylene glycol (PPG, Mn=1000). Four kinds of WPU leather finishing agents (WPUO, WPU1, WPU2, WPU3) were prepared by adding different contents of the bio-based material tannic acid (TA) as a cross-linking agent. After a series of tests, the results showed that the thermal degradation temperature of WPU films and their tensile strength increased with the rise of TA content. When 0.6g TA was added, the tensile strength and thermodynamic stability reached the highest values, but the elongation at break was the lowest at the same time. The addition of the cross-linking agent TA reduced the hydrophilicity of the WPU film from% 40.8% to 16.2%. In the application of leather finishing, both dry and wet rubbing increased 1 to 2 grades through the introduction of TA and the folding fastness also improved significantly. The molecular chains were more closely arranged, and the distances between the molecules were also reduced on account of the incorporation of TA, resulting in a decrease in water vapour permeability. Based on this, the water contact angle of the finished leather has also increased from 68° to 99°. TannasesLes tannases constituent une classe d'enzymes, de référence EC EC 3.1.1.20), qui catalysent les réactions chimiques :
digallate + H2O ⇌ {\displaystyle \rightleftharpoons } \rightleftharpoons 2 gallate
Les deux substrats de cette enzyme sont donc l'digallate et l'H2O, et son produit de réaction est le gallate.
Cette enzyme appartient à la famille des hydrolases et plus spécifiquement à ceux qui agissent sur les liaisons ester carboxyliques. Le nom de cet classe d'enzyme est acylhydrolase tannique. Parmi les autres noms en vigueur, on trouve tannase S et acetylhydrolase tannique.
En plus de catalyser l'hydrolyse de la liaison ester centrale entre les deux anneaux aromatiques du digallate (activité de dépsidase), les tannases peuvent aussi avoir une activité d'estérase (hydrolyse de la fonction ester terminale attachée à une des deux anneaux aromatiques).
Les tannases sont des enzymes clé dans la dégradation des gallotanins, un type de tanins hydrolysables. On les trouve dans divers groupes de microorganisme, incluant les bactéries de la panse.Index. décimale : 675.2 Préparation du cuir naturel. Tannage Résumé : The use of fungal enzymes, such as tannases and oxidative enzymes, in the tannin bioconversion process offers great advantages over other biological and chemical technologies in terms of safety, re-use, and better control of process parameters, and is also a profitable and environmentally friendly method. Some reports have shown that different fungi can remove tannins from effluents, transforming them and/or detoxifying them, and using them, in some cases, as their only source of carbon. By means of different enzymes, these fungi trigger reactions that lead to the elimination of water-soluble tannins, which are the cause of toxicity in surface water bodies. Thus, these microorganisms are attractive to obtain enzyme cocktails applicable to the bioremediation of effluents rich in tannins, such as those derived from the leather industry. This review aims to provide updated information on fungal sources of enzymes able to transform tannins, with emphasis on tannases, and to show alternatives to culture tannase-producing fungi and obtain the enzymes and their activity in immobilization matrices. The inducible nature of the fungal synthesis of tannases reveals the importance of acquiring basic knowledge about the physiology of tannase-producing fungi and the need for studies in different culture and scaling systems.
