Glutamique, AcideL'acide glutamique ou glutamate (la forme anionique de l'acide glutamique) est l'un des 20 acides-α-aminés naturels constituant les protéines. Sa chaîne latérale contient un résidu carboxyle, ce qui en fait un acide aminé « acide », dicarboxylique, polaire.

RhéologieIndex. décimale : 668.5 Parfums et cosmétiques Résumé : Le phénomène unique d'épaississement micellaire étudié depuis de nombreuses années a été mis en évidence par l'association de glutamate et d'un tensio-actif glycosidique. Une viscosité remarquable peut être obtenue en combinant à de faibles concentrations ces deux tensioactifs verts grâce à un choix approprié du pH et sans avoir recours à des agents épaississants additionnels. La synthèse et la caractérisation de ces produits ne sont étudiées que depuis peu, alors qu'il est maintenant admis que la fonctionnalisation et la polydisperité sont des paramètres importants de l'association. Sur des polymères modèles, nous avons effectué des mesures rhéologiques à très grandes fréquences et des études structurales par diffusion du rayonnement, sur des solutions au repos et soumises à un gradient de cisaillement.
