Lactique, AcideL'acide lactique est un acide organique qui joue un rôle dans divers processus biochimiques. Un lactate est un sel de cet acide. Contrairement à ce que peut laisser penser son nom, l'acide lactique n'est pas présent uniquement dans le lait, mais également dans le vin, certains fruits et légumes, et dans les muscles.
L'acide lactique est un acide alpha hydroxylé, sa formule chimique est C3H6O3 et sa structure se reflète dans son nom systématique, l'acide 2-hydroxypropanoïque.
PepsineLa pepsine est une endoprotéase digestive du suc gastrique. Son N° EC est EC 3.4.23.1.La pepsine est une enzyme du règne animal découverte par le docteur Beaumont en 1833.
La pepsine dégrade les protéines du bol alimentaire en hydrolysant les liaisons peptidiques avant les acides aminés aromatiques.
Le pH optimum d'action de la pepsine se situe entre 1,8 et 4,4.
Elle est composée en majorité d'acide aspartique et d'acide glutamique.
Elle est synthétisée sous forme de pepsinogène par les cellules principales de l'estomac (proenzyme = zymogène inactive) puis stockée dans les vésicules enzymatiques des cellules principales, d'où elle est excrétée au moment de la digestion. (Wikipedia)Index. décimale : 675 Technologie du cuir et de la fourrure Résumé : A new ultrasound-assisted lactic acid-pepsin hydrolysis method was used to extract yak hide collagen. In the extraction process, a strong mechanical vibration wave and cavitation destroyed the interaction between collagen and its matrix. Lactic acid made collagen fibres loose enough and shortened the extraction time. Lactic acid had also a certain antiseptic and bactericidal effect. Pepsin could remove the non-helical structure of yak hide collagen and reduce the risk of immune rejection of yak hide collagen. The optimum conditions of ultrasound-assisted lactic acid-pepsin hydrolysis method were as follows: At first, degreased yak hide was soaked in lactic acid solution with pH 2.0 for 24 hours and control the liquor ratio of 15. Then, acid treated yak hide was soaked in 2.0% (dry hide) pepsin solution with pH2.0 for 24 hours and control the liquor ratio of 15 under pulsating ultrasound treated with 20 KHz ultrasonic power 200 W for 20 minutes. UPYC had the characteristics of type I collagen. The new ultrasound-assisted lactic acid-pepsin hydrolysis method shortened the extraction time of UPYC, which was economical and clean. ChitosaneLe chitosane ou chitosan est un polyoside composé de la distribution aléatoire de D-glucosamine liée en ß-(1-4) (unité désacétylée) et de N-acétyl-D-glucosamine (unité acétylée). Il est produit par désacétylation chimique (en milieu alcalin) ou enzymatique de la chitine, le composant de l'exosquelette des arthropodes (crustacés) ou de l'endosquelette des céphalopodes (calmars...) ou encore de la paroi des champignons. Cette matière première est déminéralisée par traitement à l'acide chlorhydrique, puis déprotéinée en présence de soude ou de potasse et enfin décolorée grâce à un agent oxydant. Le degré d'acétylation (DA) est le pourcentage d'unités acétylées par rapport au nombre d'unités totales, il peut être déterminé par spectroscopie infrarouge à transformée de Fourier (IR-TF) ou par un titrage par une base forte. La frontière entre chitosane et chitine correspond à un DA de 50 % : en deçà le composé est nommé chitosane, au-delà , chitine. Le chitosane est soluble en milieu acide contrairement à la chitine qui est insoluble. Il est important de faire la distinction entre le degré d'acétylation (DA) et le degré de déacétylation (DD). L'un étant l'inverse de l'autre c'est-à -dire que du chitosane ayant un DD de 85 %, possède 15 % de groupements acétyles et 85 % de groupements amines sur ses chaînes.
Le chitosane est biodégradable et biocompatible (notamment hémocompatible). Il est également bactériostatique et fongistatique.
Le chitosane est également utilisé pour le traitement des eaux usées par filtration ainsi que dans divers domaines comme la cosmétique, la diététique et la médecine.

Tannage Résumé : The leather industry generates considerable amounts of solid waste and raises many environmental concerns during its disposal. The presence of collagen in these wastes provides a potential protein source for the fabrication of bio-based value-added products. Herein, a novel composite film was fabricated by incorporating vegetable-tanned collagen fiber (VCF), a mechanically ground powder-like leather waste, into a chitosan matrix and crosslinked with genipin. The obtained composite film showed a compact structure and the hydrogen bonding interactions were confirmed by FTIR analysis, indicating a good compatibility between chitosan and VCF. The optical properties, water absorption capacity, thermal stability, water vapor permeability and mechanical properties of the composite films were characterized. The incorporation of VCF into chitosan led to significant decreases in opacity and solubility of the films. At the same time, the mechanical properties, water vapor permeability and thermal stability of the films were improved. The composite film exhibited antibacterial activity against food-borne pathogens. Results from this research indicated the potential of the genipin-crosslinked chitosan/VCF composites for applications in antimicrobial packaging. Procédés de fabricationIndex. décimale : 675 Technologie du cuir et de la fourrure Résumé : An environmentally friendly biopolymer (CAA) used as a coating material for the preparation of hydrophobic paper has been developed by incorporating alkenyl succinic anhydride (ASA) into collagen hydrolysate (CH), the base paper was treated with CAA by a dip-coating technique to improve its water resistance. It was found that the acylated CH has a significantly higher surface hydrophobicity than CH and that coating with CAA is beneficial to improve the hydrophobic property of paper. Experimental results indicated that the contact angle of water droplet on CAA-coated paper surface was about 125° and the CIO ratio of CAA-coated paper was increased to 3.76. XPS analysis and FESEM images of paper surfaces proved that CAA was well retained on the surface as a hydrophobic layer. Moreover, the strength properties of CAA-coated paper were superior to those of uncoated paper. Note de contenu : - Materials
