C'est un isomère du propanal.L’acétone est un liquide transparent, inflammable, d'odeur caractéristique (plutôt fruitée). Sa température de fusion est de -95,4 °C et celle d'ébullition de 56,53 °C. Elle a une densité relative de 0,819 (à 0 °C). C'est un composé très soluble dans l'eau (c'est une molécule polaire à chaîne carbonée courte), dans l'éthanol et dans l'éther. L'acétone est le dérivé le plus simple de la série des cétones aliphatiques et la présence de la double liaison carbone-oxygène lui confère l'essentiel de sa réactivité.

EnzymesUne enzyme est une protéine dotée de propriétés catalytiques. Pratiquement toutes les biomolécules capables de catalyser des réactions chimiques dans les cellules sont des enzymes ; certaines biomolécules catalytiques sont cependant constituées d'ARN et sont donc distinctes des enzymes : ce sont les ribozymes.
Une enzyme agit en abaissant l'énergie d'activation d'une réaction chimique, ce qui accroît la vitesse de réaction. L'enzyme n'est pas modifiée au cours de la réaction. Les molécules initiales sont les substrats de l'enzyme, et les molécules formées à partir de ces substrats sont les produits de la réaction. Presque tous les processus métaboliques de la cellule ont besoin d'enzymes pour se dérouler à une vitesse suffisante pour maintenir la vie. Les enzymes catalysent plus de 5 000 réactions chimiques différentes2. L'ensemble des enzymes d'une cellule détermine les voies métaboliques qui peuvent avoir lieu dans cette cellule. L'étude des enzymes est appelée enzymologie.
Les enzymes permettent à des réactions de se produire des millions de fois plus vite qu'en leur absence. Un exemple extrême est l'orotidine-5'-phosphate décarboxylase, qui catalyse en quelques millisecondes une réaction qui prendrait, en son absence, plusieurs millions d'années3,4. Comme tous les catalyseurs, les enzymes ne sont pas modifiées au cours des réactions qu'elles catalysent, et ne modifient pas l'équilibre chimique entre substrats et produits. Les enzymes diffèrent en revanche de la plupart des autres types de catalyseurs par leur très grande spécificité. Cette spécificité découle de leur structure tridimensionnelle. De plus, l'activité d'une enzyme est modulée par diverses autres molécules : un inhibiteur enzymatique est une molécule qui ralentit l'activité d'une enzyme, tandis qu'un activateur de cette enzyme l'accélère ; de nombreux médicaments et poisons sont des inhibiteurs enzymatiques. Par ailleurs, l'activité d'une enzyme décroît rapidement en dehors de sa température et de son pH optimums.

New unhairing and dewooling operations based on bath temperature control were applied, without affecting the quality and properties of the not yet stabilized collagen fibers. The objective was the activation of the enzymes already present in raw hides and skins, resulting in an ecological process that avoids chemicals. Only small additions of auxiliaries ton control pH were added to the unhairing or dewooling bath. Once hair and wool were removed from the grain side, the pelts were subjected to a solvent dehydration-degreasing operation, where the putrescible collagen material was converted into a stable dry collagen material was converted into a stable dry collagen material able to be commercialized and easily stabilized by immersion procedures. It included the design of a new machine to obtain a collagen-dehydrated biomaterial (BCD in a non-emission cycle using a polar solvent. The results are ; curing and soaking are not necessary, salts and sulphides can be avoided. For this reason, this is projected to be a new-pollutant beamhouse procedure followed by the production of dry collagenic material that is stable, spongy and with no special requirements for their storage and commercialization. Such a prediction will be useful in the colour matching of leather – the time delay in drying of wet leather and determination of the final colour can be avoided. The use of computer technology interfaced with a reflectance spectrophotometer provides a novel approach to the prediction of dry colour from wet colour. In this study, five different regression models, i.e. linear fit, log fit, quadratic fit, log quadratic fit and cubic fit, were developed, with the dry reflectance of the leather sample as a dependent variable and the wet reflectance of the leather as an independent variable. The relationship between moisture content and surface leather colour, a prerequisite for enabling prediction, was studied. The obtained log quadratic model can be used for accurate prediction of dry colour from wet colour. Such factors as drying, tanning, types of tanning agents and tannage degree that may affect the dry heat resistance of hide and leather are included. Changes and mechanisms of samples when dry heated are analyzed and discussed. We use KCrSO4, CrCl3, Cr(NO3)3 and Sugar reduced chrome liquor as tanning agents to study tanning effects on the dry heat resistance of hide fiber. It can be found that chrome tanning may reduce the initial shrinkage temperature, and increase the final shrinkage temperature. It is to say that chrome tanning may broaden the shrinkage range of hide fiber. Dry heat resistance of hide fibers with different degrees of tanning is also studied. Shrinkage ratio of hide fiber tanned with KCrSO4 decreases with increasing KCrSO4 concentration in the tanning liquors. Hide fiber tanned with sugar -reduced chrome liquor posseses the best dry heat resistance in all the four kinds of tanned hide fiber samples studied. The author has tried to develop a new process to resolve the problem and has found it possible to select a water-immiscible organic solvent, such as "light wax", to serve as the carrier. The chrome powder is not soluble in the carrier solvent but, by virtue of the small quantity of water held in the pelts, the chrome powder dissolves therein and penetrates quickly through the whole thickness of the pelts. The solvent can be used, repeatedly, without any other treatment.
After tanning, the solvent is separated readily on standing so that no chrome pollution is discharged. The equipment is simple, the technique is easy, the quality of the finished leather is excellent, the cost is reasonable and, finally, chrome contamination can be avoided. In addition, the water-immiscible organic solvent carrier provides a cushioning action such that the pelts can be rotated smoothly and as freely as in aqueous media. Vacuum drying offers fast speed at a low temperature, which would be advantageous to heat-vulnerable chrome-free leather. Adding a toggle action after vacuum drying could significantly increase area yield. Using a statistical experimental design, we formulated regression models describing how drying variables affect mechanical properties and area yield of chrome-free leather tanned with glutaraldehyde. An effort was also made to estimate the effects of conditioning, staking, and drum milling on the area retention gained by toggle stretching. This study showed that the direction the stretch was applied had a significant effect on the area retention. Results also indicated that conditioning and staking have little effect on area retention, whereas the drum milling caused a significant drop in area retention. Our study also showed under an optimal drying condition, a 12% increase in area yield with good properties can be achieved.
