RhéologieIndex. décimale : 532.05 Mécanique des fluides et des liquides - Dynamique (cinétique et cinématique) Résumé : Le comportement rhéologique d'émulsions concentrées huile/eau en régime stationnaire, montre des caractéristiques rhéofluidifiantes qui sont associées aux modifications de la concentration en émulsifiant (protéines). Lorsque cette dernière augmente, il apparait dans le rhéogramme, un domaine de contrainte où le comportement est rhéo-épaississant.
Le modèle rhéologique développé prend en compte les caractéristiques structurelles de ces émulsions qui dépendent de paramètres physiques et physico-chimiques, notamment la concentration en protéines (caseïnate de sodium) qui commande la floculation par déplétion. En plus des processus classiques-formation par effet brownien et par déplétion, rupture sous cisaillement-, la cinétique de structure introduite dans le modèle contient des contributions du types floculation-défloculation induites par le cisaillement.
