Résumé :	Differential scanning calorimetry shows two temperature regions of collagen denaturation in corium major of butt hide from mature cattle, a narrow region centered at 68°C and a wide region ar 85°C. Both temperatures are sensitive to beaming and tanning processes, but the enthalpiy of denaturation remains constant at 13 cal/g in all but tanned samples. It is concluded that there are two populations of collagen in the hide in commensurate amounts; only the heat sensitivity of the less stable population is indicated by the shrinkage temperature as usually measured.
