Langues : Américain (ame) Index. décimale : 675 Technologie du cuir et de la fourrure Résumé : Fleshings, the major solid waste generated at the pretanning operations of leather processing, were hydrolysed using pancreatic enzymes with a view to evolve a simple method for solid waste management. The proteolytic activity of pancreatic homogenate with casein was found to be 80 units/ml. Fleshings, treated with pancreatic enzyme preparation showed a six fold increase in proteolysis against the control at the end of 7 days. The total protein content, collagen and the free fatty acids in the hydrolysate supernatant were 80.0, 10.64 and 72.86 mg/ml respectively. The optimum pH for the enzyme preparation was 8.5. The hydrolysis was observed by almost total liquifaction of the fleshing. Langues : Américain (ame) Index. décimale : 675 Technologie du cuir et de la fourrure Résumé : A gelable protein is isolated during the aqueous magnesium oxide treatment of chromium-containing solid leather waste. For this process to be cost effective, markets have to be identified for these gelatin-like protein products. Technical grade gelatins have many uses, such as in the preparation of adhesives, cosmetics, paints, encapsulating agents, flocculating agents and fireproofing agents. In order to demonstrate that our products compare to technical grade gelatins, the functional properties of the gelable protein were examined; a commercial gelatin product was used as a reference. In a previous study we demonstrated that the gelable protein products isolated from the alkali treatment of chrome shavings had adhesive properties comparable to commercial products. In this present study, ability to form a gel, foamability, capacity to form emulsions, and oil and water absorption properties are examined. A description of methodology to evaluate the properties is reported. The data show that the functional properties of the magnesium oxide extracted gels are comparable to, and sometimes superior to, technical grade gelatins.
