Tannage Résumé : In order to evaluate if the tannery residue derived from an industry of rio grande do sul state could be used as fertilizer and amendment, laboratory assays and experiments were conducted with two red-yellow podzolic soils. The residue presented important elements to the plants' nutrition such as nitrogen (N), phosphorus (P), potassium (K), sulfur (S), calcium (Ca) and magnesium (Mg). In the residue, the heavy metals nickel (Ni), chromium (Cr), lead (Pb) and cadmium (Cd) were predominantly in nonavailable forms to the plants. It increased the pH and the cation exchange capacity of the soils and may be used to correct the pH of the acidic soils. In free drainage condition, the residue application, in rates varying from 0 to 11.1 g residue kg-1, did not show salinity problems to the soils and in spite of its high pH and high chromium content, in rates of 0, 4.4 and 8.3 g residue kg-1, it was not harmful to the rye growth. Cuirs et peaux de bovinsIndex. décimale : 675 Technologie du cuir et de la fourrure Résumé : The objective of this study is to develop an ecologically acceptable and effective means of preserving cattle hides between the time of their removal from the carcass and tanning. The effectiveness of two bacteriocins (small antibacterial peptides) from lactic acid bacteria with and without SDS was studied. The initial bacterial population of the hides following removal is predominantly gram-positive cocci and rods that are sensitive to a mixture of the two bacteriocins, nisin and pediocin AcH. Following storage of the hides at 25°C for 2d, the bacterial profile changed, with the majority being gram-negative motile rods, especially Proteus species, that were not sensitive to the bacteriocins. Supplementation of the bacteriocin mixture with sodium dodecyl sulfate (SDS 0.25%) reduced the growth of the gram-negative rods. The importance of either treating a hide immediately after removal with a suitable preservative or keeping the hides for a short time below 10°C prior to applying a preservative or keeping the hides for a short time below 10°C prior to applying a preservative is discussed. If a shift in the bacterial population occurs with gram-negative motile rods predominating, bacteriocins will need to be supplemented with other components. As these gram-negative rods are extremely proteolytic, once present the proteolytic enzymes they produce may degrade the hide quality even if a suitable preservative is used later to prevent further growth.
