Surfactants (short for surface active agents) are chemical compounds generally consisting of a hydrocarbon portion (which interacts very weakly with water molecule in an aqueous environment and squeezes out of water ; hence the chain is usually termed as hydrophobic tail) andpolar or ionic portion (usually called head group ; however, interacts strongly with water via dipole- dipole or ion-dipole interactions an is solvated, therefore called hydrohilic). |
