The mechanical functioning of connective tissues depends largely on the degree of polymerization on the collagen macromolecules- Using kinetics of carbonyl-amine reactions, the changes in mechanical properties of leather observed during drying are analyzed and postulated to be due to an increase in crosslinking between lysine molecules of neighboring collagen chains. The rate equation which was derived yielded an excellent correlation with a large amount of published experimental data on the Maillard reaction in proteins such as the crosslinking reaction between glycosaminoglycans and collagen. |
