GélatineLa gélatine est une substance solide translucide, transparente ou légèrement jaune, presque sans goût et sans odeur, obtenue par l'ébullition prolongée de tissus conjonctifs (peaux) ou d'os d'animaux (principalement porc, bœuf, poisson). Elle possède de nombreuses applications dans le domaine culinaire, la médecine, les industries agroalimentaire et pharmaceutique.
En matière d’étiquetage, la gélatine est considérée par la norme européenne3 comme un ingrédient et non pas comme un additif, c'est pourquoi elle n'a pas de numéro E. Hors Union européenne, elle est considérée par certains pays comme un additif gélifiant et on peut la trouver avec la dénomination E441.
La gélatine est un mélange de protéines obtenu par hydrolyse partielle du collagène extrait de la peau comme la peau de porc (cochon), des os, des cartilages, etc. Les liaisons moléculaires entre les fibres de collagène sont alors brisées. Mélangée à de l'eau, la gélatine forme un gel colloïdal semi-solide thermo-réversible (il fond lorsqu'il est chauffé et recouvre son aspect gélatineux lorsqu'il est refroidi). Sous forme déshydratée, par contre, la gélatine n'a pas de point de fusion et devient friable ou brûle quand elle est chauffée à trop haute températureLa rhéologie de la gélatine se caractérise par un comportement viscoélastique, et des contraintes trop élevées ou appliquées trop rapidement peuvent entraîner une rupture fragile (fracturation) ou ductile6. Le caractère plutôt élastique/fragile ou plutôt visqueux/ductile dépend de la concentration en gélatine de la solution aqueuse et de la température, ainsi que de la durée de la mise sous contrainteLes acides aminés constituant la gélatine sont : la glycine (21 %), la proline (12 %), l'hydroxyproline (12 %), l'acide glutamique (10 %), l'alanine (9 %), l'arginine (8 %), l'acide aspartique (6 %), la lysine (4 %), la sérine (4 %), la leucine (3 %), la valine, la phénylalanine et la thréonine (2 %), l'isoleucine et l'hydroxylysine (1 %), la méthionine et l'histidine (< 1 %) et la tyrosine (< 0,5 %). Ces valeurs sont variables (surtout pour les constituants minoritaires) et dépendent de la source de matériaux bruts et de la technique de préparation. La gélatine est constituée à environ 98-99 % (en poids sec) de protéines et contient 18 acides aminés dont huit des neuf acides aminés essentiels à l'Homme. Elle n'a qu'une relative valeur nutritionnelle du fait de l'absence de tryptophane et de son déficit en isoleucine, thréonine et méthionine; elle possède également un taux inhabituellement élevé d'acides aminés non essentiels, la glycine et la proline (qui sont produits par le corps humain). GénipineIndex. décimale : 675 Technologie du cuir et de la fourrure Résumé : Genipin is an iridoid compound extracted from gardenia fruits. Because of its low cytotoxicity, genipin can be used to replace both glutaraldehyde and formaldehyde as a crosslinking reagent. In recent years, research into the utilization of genipin for the modification of gelatin, particularly in the area of biomedical products, has increased. In prior research we had shown the potential of chemical (glutaraldehyde) and enzyme (transglutaminase) modified gelatin as fillers for leather. In this present study, we investigated whether genipin-modified gelatin products would be applicable. We initially determined optimal reaction conditions of genipin with gelatin for the purpose of creating products with suitable molecular weight distributions, viscosities and melting temperatures that would be appropriate for them to be used as fillers in leather processing. We applied the products to blue stock and, using epifluorescent microscopy, verified that these products were uniformly distributed through the blue stock and were not removed during washing. We scaled up these treatments and applied them to different areas of the hides; subsequently the pieces were retanned, colored and fatliquored (RCF), mechanical properties were determined and subjective evaluation was carried out. It was found that the mechanical properties were not significantly different from those of the control pieces and, with respect to subjective evaluation (handle, fullness, break and color) the treated products fared better than the controls. We also investigated the hydrothermal stability of the blue stock and RCF samples and found that there was an improvement in the shrink temperature in the genipin/gelatin-treated samples. SEM showed that the fibers appeared to be coated with the product, a phenomenon that we had observed in studies using transglutaminase-modified proteins. But there are very few methods that are environmentally friendly and cost effective that give leather with performance as good as chrome tanned leather. DasGupta and Debchoudhury reported systems based on oxazolidine and mimosa that gava satisfactory leather with high shrinkage temperature. Vitolo et al reported a tara-aluminum sulphate tanning system as an alternative to traditional chrome tanning. But these are not yet commercially accepted. In this report, a novel eco-friendly approach for the production of upholsteryleather is given that avoids pickling. The leather is pretanned after bating at pH 7.5-8.5 with 2% oxazolidine E (1-aza-3,7-dioxabicyclo-5-ethyl (3,3,0) octane) to obtain shrinkage temperature around 75-80°C for hides and 80-85°C for skins. These pelts are simultaneously of after treated with 2-3 % replacement syntan. These pretanned hides and skins may be split and/or shaved at this stage, without any difficulty, to the required thickness. This provides opportunities for a tanner to either chrome tan with 4-5% chrome powder 25/33 (25% Cr2O3 content / 33% basicity) following the LASRA ThruBlu systemor organically tan the shaved hides as reported earlier by DasGupta and Debchoudhury.
The splitting and shaving at this stage has the added advantage of lowering the amount of chrome use, very low chrome in effluent, flatter grain, higher area yield of the final leather, and biodegradable chrome-free shavings. This would considerably minimize the disposal problemfor a tannery. The details of these methods are given with performance data to show that the leather satisfies all requirements of modern upholstery leather. A new coating formulation has been studied in order to obtain an article which meets these two characteristics. The present study aims to obtain a patent leather finish with a pull-up effect. In addition, it aims to make improvements in the process by replacing the usual solvent based patent top with an aqueous patent topcoat. As a result, the article obtained in industrial scale complies with the European Union Council Directive 1999/13/EC of 11 march 1999 (on the limitation of emissions of volatile organic compounds due to the use of organic solvents in certain activities and installations).
The finished leathers obtained with this new coating formulation are transparent, smooth, with a glossy look (almost glass-like) and with an accentuated pull-up effect. Langues : Américain (ame) Index. décimale : 675 Technologie du cuir et de la fourrure Résumé : To meet the growing demand for white garments and pastel shade leathers, a new combination tanning sytem based on acetaldehyde, glutaraldehyde and tetrakis (hydroxymethyl) phosphonium sulphate (THPS) has been developed. The advantages of this tanning system include not only producing white leathers but also completely doing away with chrome. Three separate combinations viz. acetaldehyde-THPS, glutaraldehyde-THPS and acetaldehyde-glutaraldehyde-THPS have been studied. The shrinkage temperature of the leathers obtained using acetaldehyde-glutaraldehyde-THPS combination is 86°C. The organoleptic and the strength properties of the leathers made using this combination system have been found to be on par with that of conventional chrome tanned leather. Aldehyde tanning is known to yellow on ageing and exhibit poor light fastness. However, this new tanning system exhibits good light fastness owing to the presence of THPS.
